Goto (pronounced go-toh) is the Filipino take on congee: rice cooked down in a rich stock until the grains break apart and the bowl turns silky. Our version leans hard on garlic and onion, the way it is made in Filipino homes, and is finished with a soft egg and a scatter of crisp fried garlic that keeps every spoonful interesting.
We simmer the broth through the evening rather than in a single rush, which is why the Clasico tastes settled rather than sharp.
