Mami is a Filipino noodle soup built on a clean, well-seasoned broth rather than a thick one. We drop in the same slow-braised pares beef, add noodles and let the sweetness of the braise carry through the soup. The result sits somewhere between a beef noodle soup and a rice-plate pares.
It is lighter than lomi and more substantial than a plain soup - a good middle order on a cold night in Winnipeg. Available to eat in, take out or have delivered across the West End and downtown.
